Everyday Banana Walnut Bread  

Simple, Easy, Delicious
Prepare and bake this delicious and healthy banana walnut bread in less than an hour. Part of what takes so long, is waiting 45 - 50 minutes for it to bake, but it is well worth the wait! I call this my "everyday" banana bread, because I loved it so much that I ate it everyday for 2 years. Try it and you won't believe how quickly it becomes one of your favorite recipes.  If you love this recipe, you will also want to substitute pumpkin puree and make Pumpkin Bread see below for recipe.

Banana Walnut Bread Ingredients: 
3 large or 4 small ripe bananas
½ cup organic expeller pressed canola oil 
½ cup organic maple syrup
1 t vanilla extract
1 t baking soda
1 t salt
1 ¾ cups organic whole grain pastry flour
½ cup to ¾ cup raw walnuts

For Pumpkin Bread:
Replace Banana with 1 1/4 cup Pumpkin Puree
Add 1/2 tsp Cinnamon
Add an additional 1/4 tsp of baking sodaI usually remove the walnuts from the pumpkin bread

Directions: 
Pre-heat oven to 350 degrees. You will need a non-stick 9-inch loaf pan.
1. Mash the bananas until they become a thick paste, using a potato masher.
2. Mix in canola oil until fully combined with the bananas. 
3. Mix in maple syrup. 
4. Mix in vanilla extract. 
5. Mix in baking soda and then salt.
6. Gradually mix in pastry flour
7. Mix in chopped raw walnuts. 

Bake for 45-50 minutes or until cake tester comes out clean.  Let banana bread cool for 10 – 15 minutes and then loosen the sides of your 9-inch loaf pan with a butter knife or plastic knife before turning it out.
